奶黄酥皮月饼
A traditional Chinese mooncake filled with egg filling.

Ingredients
- •(奶黄馅)2鸡蛋
- •125g牛奶
- •30g细砂糖
- •35g低筋面粉
- •15g玉米淀粉
- •15g奶粉
- •25g 黄油
- •(酥皮)80g黄油
- •25g糖粉
- •30g蛋液
- •140g低筋面粉
- •25g奶粉
Instructions
- 1.wash 绿豆 with water, then soak overnight in the fridge
- 2.(奶黄馅)打入鸡蛋,加入牛奶搅拌均匀
- 3.加入细砂糖,低筋面粉,玉米淀粉,奶粉
- 4.过筛到锅里,加入黄油,小火不停的翻拌,不粘锅了就是好了
- 5.分成25g的小球
- 6.(酥皮)软化的黄油加入糖粉拌匀
- 7.加入30g常温蛋液拌匀
- 8.加入低筋面粉和奶粉
- 9.拌匀后捏成25g的小球
- 10.(包)一个酥皮包一个奶黄馅,过上面粉防粘
- 11.压出花纹
- 12.表面喷点水
- 13.350F 考五分钟
- 14.取出放凉后刷上蛋液
- 15.300F 考15分钟
